Even the chips that claim to be stone ground and whole grain are usually fried in pro-inflammatory oils. What’s a lonely, yet delectable, dip to do?

One Essential Ingredient – Healthy Anti-inflammatory Extra Virgin Olive Oil

The acronym EVOO might have been made popular by cooking per­sonality Rachel Ray, but extra-virgin olive oil has been a mainstay of the Mediterranean diet and is one of the oldest known culinary oils. Extra-virgin olive oil contains predominately monounsaturated fat.

It also contains antioxidants and flavonoids that help prevent bad LDL cholesterol from oxidizing and becoming dangerous to your blood vessels. However, extra-virgin olive oil cannot be heated to extremely high temperatures or it will spoil, so be careful to cook on low heat, such as low-heat sautéing.

Enjoy Roasting Vegetables with Extra Virgin Olive Oil too!

You can roast vegetables with extra-virgin olive oil and even bake with it, but again, keep the heat low, below about 400 degrees. By the way, a good test for any oil is that if it smokes, the heat is too high.

Corn Tortilla Chips Homemade

Baked corn tortilla chips homemade take no time to prepare and taste so much better than anything you can buy. Just 3 simple ingredients.

  • Cook Time: 14 minutes
  • Total Time: 24 minutes

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 8 corn tortilla shells
  • Sea salt, to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Using a large knife, cut the tortilla shells into 6 or 8 slices and place them in a single layer on 2 large baking pans.
  3. In a small bowl, add the extra virgin olive oil. Using a small basting brush, lightly cover both sides of the cut tortilla triangles with oil.
  4. Bake tortillas for 6 minutes. Remove the baking pans from the oven and flip each one over individually. Season with sea salt and place back in the oven for an additional 8-10 minutes. Remove tortillas from the oven and let cool for at least 8 minutes before you start dipping.

Why We Choose Homemade Over Store Bought

From a manufacturer’s standpoint, there are two big reasons that get in the way with using a healthy oil: 1) cost and 2) oxidation. Nutrient-rich, antioxidant-rich, unrefined oils are expensive. And to complicate matters, most oils are not heat-stable enough to withstand frying.
