Black Bean Chili in slow Cooker

Apple, Pumpkin & Black Bean Chili…In a Slow Cooker

Mmmmm….this is one of my favorite fall chili recipes.  Making the chili in a slow cooker allows for the flavors of all of the ingredients to intensify without adding lots of meat. By the way, you can make the black bean chili with our without the ground pastured beef—it tastes great either way. Whether you use the meat or not, the end result is a rich, savory and satisfying chili bursting with phytonutrients and antioxidants from the unique blend of highly nutrient-dense seasonal ingredients.

And although I promise you would never know it, this dairy-free/ gluten-free treat is so nutritious you could actually eat it for breakfast (and feel proud of yourself for doing so!)
