Pumpkin pie is a must at Thanksgiving. It is also one of my favorite desserts from childhood, so I am very picky about it tasting just-so, especially during the holidays.
Sometimes it is hard to recreate a favorite childhood recipe when you grow up. Lucky for me though, Libby’s Famous Pumpkin Pie recipe is still in print on the back of their canned pumpkin puree—so I can see exactly what was in the pumpkin pie of my childhood Thanksgiving dinners. With a little bit of work I was able to recreate the flavor, texture…and memories.
And, if you can keep a secret….
I was also able to make it gluten-free, dairy-free and with zero refined sugar. But I promise if you don’t tell, nobody will ever know! Shhhhh….
